Description
Sweet potatoes and apples roasted to perfection with maple syrup and cinnamon. A delightful, easy-to-make side dish.
Ingredients
Scale
- 2 medium sweet potatoes, cut into 1/2-inch cubes
- 2 medium apples, cut into 1/2-inch cubes
- 3 tablespoons salted butter, melted and divided
- 1 teaspoon fine sea salt
- 2 tablespoons pure maple syrup
- 1 teaspoon ground cinnamon
Instructions
- Preheat your oven to 425 degrees Fahrenheit.
- Lightly grease a large baking pan and set it aside.
- In a large mixing bowl, combine the cut sweet potatoes with 2 tablespoons of the melted butter. Stir thoroughly until the potatoes are evenly coated.
- Add the fine sea salt to the sweet potatoes and stir until uniformly distributed.
- Transfer the seasoned sweet potatoes to the prepared baking pan. Bake in the preheated oven for 20 minutes, stirring halfway through, until they just begin to brown.
- While the sweet potatoes are baking, combine the remaining 1 tablespoon of melted butter with the cut apples in a separate bowl. Add the pure maple syrup and ground cinnamon, then stir to combine all ingredients.
- After 20 minutes, or once the sweet potatoes have started to brown, remove the baking pan from the oven. Add the prepared apple mixture to the sweet potatoes and stir to ensure even distribution.
- Return the pan to the oven and continue baking for another 15 to 20 minutes, stirring once halfway through this cooking period.
- Once the sweet potatoes and apples are tender, browned, and the maple syrup has caramelized, remove them from the oven. Serve immediately.
