Description
This Grilled Corn with Chipotle Lime Butter recipe features sweet corn ears grilled to smoky perfection and served with a flavorful, zesty chipotle lime butter.
Ingredients
Scale
- 1 stick salted butter, softened
- 1 lime, zested and cut into wedges
- 1/4 teaspoon ground chipotle chili powder
- 12 ears of corn, shucked
- 1/4 cup chopped cilantro
Instructions
- In a medium bowl, mash the softened butter together with the lime zest and ground chipotle chili powder until well combined.
- Spoon the butter mixture evenly into the 12 wells of a clean ice cube tray. Place the tray in the freezer and allow the butter to firm up while you prepare the corn.
- Heat your grill to medium-high heat, ensuring it is properly cleaned and oiled to prevent sticking.
- Place the shucked corn ears on the grill, turning them frequently to char all sides evenly. Grill for 8 to 12 minutes until nicely charred and cooked through.
- Remove the butter portions from the ice cube tray by twisting it or running warm water over the back to loosen them. Serve each ear of grilled corn topped with a chipotle lime butter cube, lime wedges for squeezing, and a sprinkle of fresh chopped cilantro.
Notes
- This recipe is perfect for barbecues and outdoor gatherings.
