Ingredients

  • 2 lbs Asparagus (very thick, ends trimmed)
  • 3 tablespoons Extra-virgin olive oil (divided)
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Freshly ground black pepper
  • 1 zest Lemon
  • 1 tablespoon Freshly squeezed lemon juice
  • 3 oz Feta cheese (crumbled (about ¾ cup))

Instructions

  1. Preheat the grill to high heat, reaching about 450°F.
  2. Prepare the asparagus by drizzling with 2 tablespoons of olive oil, sprinkling with salt and pepper, and tossing until evenly coated.
  3. Grill the asparagus on the heated grill, perpendicular to the grates, for about 3 to 4 minutes.
  4. Cool the grilled asparagus slightly before transferring them back onto the baking dish.
  5. Slice the spears on the bias into bite-sized pieces and place them into a mixing bowl.
  6. Mix in the remaining tablespoon of olive oil, lemon zest, and lemon juice, and toss gently to combine.
  7. Fold in the crumbled feta gently to preserve its creaminess, then taste and adjust seasoning as needed.
  8. Serve on a platter and enjoy warm or chilled.
