- 2 lbs Asparagus (very thick, ends trimmed)
- 3 tablespoons Extra-virgin olive oil (divided)
- 0.25 teaspoon Salt
- 0.25 teaspoon Freshly ground black pepper
- 1 zest Lemon
- 1 tablespoon Freshly squeezed lemon juice
- 3 oz Feta cheese (crumbled (about ¾ cup))
Instructions
- Preheat the grill to high heat, reaching about 450°F.
- Prepare the asparagus by drizzling with 2 tablespoons of olive oil, sprinkling with salt and pepper, and tossing until evenly coated.
- Grill the asparagus on the heated grill, perpendicular to the grates, for about 3 to 4 minutes.
- Cool the grilled asparagus slightly before transferring them back onto the baking dish.
- Slice the spears on the bias into bite-sized pieces and place them into a mixing bowl.
- Mix in the remaining tablespoon of olive oil, lemon zest, and lemon juice, and toss gently to combine.
- Fold in the crumbled feta gently to preserve its creaminess, then taste and adjust seasoning as needed.
- Serve on a platter and enjoy warm or chilled.
