Description

These easy green bean bundles are wrapped in crispy bacon and coated in a sweet and savory brown sugar garlic glaze. They are a perfect side dish for holidays like Thanksgiving and Christmas.


Ingredients

  • 16 oz Fresh French Green Beans, washed and ends trimmed
  • 7 slices bacon, halved
  • 4 tablespoons unsalted butter, melted
  • 3 tablespoons brown sugar
  • 1 teaspoon pepper
  • 1 teaspoon salt
  • ½ teaspoon garlic powder
  • Fresh parsley, chopped for garnish

Instructions

  1. Preheat oven to 400°F and line a baking sheet with parchment paper.
  2. Bring a pot of water to a boil and add green beans. Cook for 3-4 minutes.
  3. Drain green beans and submerge in ice water for 1-2 minutes. Drain and pat very dry.
  4. Cut bacon slices in half. Cook bacon in a skillet over medium heat until it starts to brown, but is not crisp.
  5. Bundle 7-8 green beans together. Wrap a half slice of bacon around each bundle and secure with a toothpick.
  6. Place bundles on the prepared baking sheet.
  7. In a small bowl, mix together melted butter, brown sugar, pepper, salt, and garlic powder.
  8. Brush each green bean bundle with the butter mixture.
  9. Roast for 18-20 minutes, or until bacon is crisp and beans are tender-crisp.
  10. Let rest for 5 minutes, remove toothpicks, and garnish with parsley if desired.

Notes

  • Use thin-cut bacon for best results.
  • Partially cook bacon before wrapping to ensure it crisps evenly.
  • Blanching and shocking the beans locks in color and stops cooking.
  • Dry beans thoroughly before wrapping to prevent sogginess.
  • Brush glaze on the outside of the bundle for caramelization.
  • Do not overcrowd the baking sheet to allow for proper air circulation.
  • Insert toothpicks along the seam and remove after resting.
