  • 4 medium Gold potatoes, chopped into chunks
  • 1 medium Carrot, chopped
  • 2 cups Frozen sweet peas
  • 1/4 cup Fresh parsley, chopped
  • 2 tablespoons Fresh dill, chopped
  • 1 cup Feta cheese, crumbled

Instructions

  1. In a large pot, warm the olive oil over medium heat. Toss in the diced onion and sauté until soft and translucent, about 3-4 minutes.
  2. Stir in the minced garlic, cooking for 30 seconds until fragrant.
  3. Mix in the tomato paste, stirring for 1-2 minutes until dissolved; season with salt and pepper.
  4. Add the potato chunks and carrot pieces, stirring well for about 5 minutes.
  5. Incorporate the rinsed sweet peas and chopped herbs, then pour in 1 cup of water and gently mix.
  6. Cover and simmer for 15-20 minutes, stirring occasionally until the vegetables are tender.
  7. Remove from heat and fold in crumbled feta to the portion you’re enjoying right away.
