Description
A wholesome and nourishing dish featuring Greek Sweet Peas and Potatoes, infused with garlic, onion, and creamy feta.
Ingredients

- 2 tablespoons Olive oil
- 1 medium Onion, diced
- 3 cloves Garlic, minced
- 2 tablespoons Tomato paste
- to taste Salt
- to taste Pepper
- 4 medium Gold potatoes, chopped into chunks
- 1 medium Carrot, chopped
- 2 cups Frozen sweet peas
- 1/4 cup Fresh parsley, chopped
- 2 tablespoons Fresh dill, chopped
- 1 cup Feta cheese, crumbled
Instructions
- In a large pot, warm the olive oil over medium heat. Toss in the diced onion and sauté until soft and translucent, about 3-4 minutes.
- Stir in the minced garlic, cooking for 30 seconds until fragrant.
- Mix in the tomato paste, stirring for 1-2 minutes until dissolved; season with salt and pepper.
- Add the potato chunks and carrot pieces, stirring well for about 5 minutes.
- Incorporate the rinsed sweet peas and chopped herbs, then pour in 1 cup of water and gently mix.
- Cover and simmer for 15-20 minutes, stirring occasionally until the vegetables are tender.
- Remove from heat and fold in crumbled feta to the portion you’re enjoying right away.
