Ingredients

  • 2 boneless skinless chicken breasts
  • 2 tablespoons olive oil plus more for drizzling
  • 2 tablespoons lemon juice
  • 2 cloves garlic minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1 cup plain Greek yogurt
  • 1/2 cup grated cucumber squeezed dry
  • 1 clove garlic minced
  • 1 tablespoon lemon juice
  • 1 tablespoon fresh dill chopped
  • 1/4 teaspoon salt
  • 1/2 cup cherry tomatoes halved
  • 1/2 cup cucumber slices
  • 1/4 cup Kalamata olives
  • 1/4 small red onion thinly sliced
  • 4 cups romaine lettuce or mixed greens
  • 1 tablespoon fresh parsley or dill garnish

Instructions

  1. Mix olive oil, lemon juice, garlic, oregano, and salt.
  2. Add chicken and marinate 30 minutes to 8 hours.
  3. Grill chicken 5–6 minutes per side until 165°F (74°C). Rest 5 minutes, then slice.
  4. Mix Greek yogurt, grated cucumber, garlic, lemon juice, dill, salt, and a drizzle of olive oil. Chill.
  5. Assemble bowls with lettuce, cucumber, tomatoes, red onion, and olives. Top with sliced chicken.
  6. Add tzatziki, drizzle olive oil and lemon juice if desired, garnish, and serve.
