Description
Juicy marinated grilled chicken served over crisp greens, fresh vegetables, olives, and topped with a creamy, refreshing homemade tzatziki sauce.

- 2 boneless skinless chicken breasts
- 2 tablespoons olive oil plus more for drizzling
- 2 tablespoons lemon juice
- 2 cloves garlic minced
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1 cup plain Greek yogurt
- 1/2 cup grated cucumber squeezed dry
- 1 clove garlic minced
- 1 tablespoon lemon juice
- 1 tablespoon fresh dill chopped
- 1/4 teaspoon salt
- 1/2 cup cherry tomatoes halved
- 1/2 cup cucumber slices
- 1/4 cup Kalamata olives
- 1/4 small red onion thinly sliced
- 4 cups romaine lettuce or mixed greens
- 1 tablespoon fresh parsley or dill garnish
Instructions
- Mix olive oil, lemon juice, garlic, oregano, and salt.
- Add chicken and marinate 30 minutes to 8 hours.
- Grill chicken 5–6 minutes per side until 165°F (74°C). Rest 5 minutes, then slice.
- Mix Greek yogurt, grated cucumber, garlic, lemon juice, dill, salt, and a drizzle of olive oil. Chill.
- Assemble bowls with lettuce, cucumber, tomatoes, red onion, and olives. Top with sliced chicken.
- Add tzatziki, drizzle olive oil and lemon juice if desired, garnish, and serve.
