Description
This Greek chicken flatbread is fresh, flavorful, and easy to pull together for lunch or dinner.

- 1 lb boneless skinless chicken breast (cut into pieces)
- ¼ cup plain Greek yogurt
- 2 tablespoons fresh lemon juice
- 2 tablespoons extra virgin olive oil (plus more for cooking)
- 1 clove garlic (finely minced)
- 1 tablespoon red wine vinegar or apple cider vinegar
- 1 teaspoon salt
- 1 teaspoon freshly cracked black pepper
- 2 teaspoons Italian seasoning or ground oregano
- 1 cup cherry tomatoes (halved)
- 1 English cucumber (peeled and sliced)
- ½ small red onion (sliced)
- ¼ cup Kalamata olives (pitted and halved)
- 2 tablespoons extra virgin olive oil
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 2 teaspoon fresh chopped dill
- Store-bought tzatziki sauce (for serving)
- ¼ cup feta cheese (plus more for serving)
- 4–6 individual pita or naan bread (warmed before serving)
Instructions
- In a medium bowl or zip-top bag, combine the chicken, yogurt, lemon juice, olive oil, garlic, vinegar, salt, pepper, and Italian seasoning. Mix well so the chicken is evenly coated. Marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more flavor.
- In a separate bowl, combine the tomatoes, cucumbers, onions, olives, olive oil, salt, pepper, and fresh dill. Toss everything together until evenly coated and season to taste.
- Heat 2 teaspoons of olive oil in a large skillet over medium-high heat. Remove the chicken from the marinade and add it to the hot pan in a single layer. Cook for about 10 minutes, turning occasionally, until the chicken is golden brown and cooked through to 165°F. Work in batches if needed so the pan isn’t overcrowded.
- To assemble, spread tzatziki sauce over the pita bread. Top with the cooked chicken and a generous scoop of the Greek salad.
- Finish with crumbled feta and extra fresh dill if desired, then serve and enjoy.
