Description

Delicious, portable focaccia muffins with a golden crust and garlicky rosemary flavor, perfect for brunch or as a savory snack.


Ingredients

  • 2 cups (250g) all-purpose flour
  • 1 ½ teaspoons instant yeast
  • 1 teaspoon salt
  • ¾ cup (180ml) warm water (about 110°F / 43°C)
  • 2 tablespoons olive oil (plus extra for the pan)
  • 3 cloves garlic, minced
  • 1 tablespoon fresh rosemary, finely chopped (or 1 teaspoon dried)
  • 2 tablespoons olive oil (for garlic-rosemary oil)
  • ½ teaspoon flaky sea salt
  • ¼ teaspoon black pepper
  • Grated Parmesan (optional)
  • Red pepper flakes (optional)
  • Sun-dried tomatoes or olives (optional)

Instructions

  1. In a large bowl, whisk together the flour, instant yeast, and salt.
  2. Pour in the warm water and 2 tablespoons olive oil. Stir until a shaggy dough forms.
  3. Turn the dough onto a lightly floured surface and knead for 6–8 minutes until smooth and elastic.
  4. Lightly oil a bowl, place the dough inside, cover with a clean kitchen towel, and let rise for about 1 hour, until doubled.
  5. Preheat oven to 375°F (190°C). Grease a 12-cup muffin tin with olive oil or nonstick spray.
  6. Punch the dough down and divide it into 12 equal pieces. Roll each into a ball and set one ball into each muffin cup.
  7. Cover the tray with a towel and let rest for 20 minutes.
  8. In a small bowl, combine the minced garlic, chopped rosemary, 2 tablespoons olive oil, flaky sea salt, and black pepper.
  9. Press dimples into the top of each dough ball, then spoon the oil mixture evenly over each muffin.
  10. Sprinkle with Parmesan, red pepper flakes, or add optional toppings if desired.
  11. Bake for 20–25 minutes until golden and crisp. Let cool briefly in the pan for 5 minutes, then transfer to a wire rack.
