- 2 cups (250g) all-purpose flour
- 1 ½ teaspoons instant yeast
- 1 teaspoon salt
- ¾ cup (180ml) warm water (about 110°F / 43°C)
- 2 tablespoons olive oil (plus extra for the pan)
- 3 cloves garlic, minced
- 1 tablespoon fresh rosemary, finely chopped (or 1 teaspoon dried)
- 2 tablespoons olive oil (for garlic-rosemary oil)
- ½ teaspoon flaky sea salt
- ¼ teaspoon black pepper
- Grated Parmesan (optional)
- Red pepper flakes (optional)
- Sun-dried tomatoes or olives (optional)
Instructions
- In a large bowl, whisk together the flour, instant yeast, and salt.
- Pour in the warm water and 2 tablespoons olive oil. Stir until a shaggy dough forms.
- Turn the dough onto a lightly floured surface and knead for 6–8 minutes until smooth and elastic.
- Lightly oil a bowl, place the dough inside, cover with a clean kitchen towel, and let rise for about 1 hour, until doubled.
- Preheat oven to 375°F (190°C). Grease a 12-cup muffin tin with olive oil or nonstick spray.
- Punch the dough down and divide it into 12 equal pieces. Roll each into a ball and set one ball into each muffin cup.
- Cover the tray with a towel and let rest for 20 minutes.
- In a small bowl, combine the minced garlic, chopped rosemary, 2 tablespoons olive oil, flaky sea salt, and black pepper.
- Press dimples into the top of each dough ball, then spoon the oil mixture evenly over each muffin.
- Sprinkle with Parmesan, red pepper flakes, or add optional toppings if desired.
- Bake for 20–25 minutes until golden and crisp. Let cool briefly in the pan for 5 minutes, then transfer to a wire rack.
