- 24 mini bell peppers
- 4 ounces goat cheese, softened
- 2 tablespoons cream cheese, softened
- 2 tablespoons chopped fresh herbs (such as parsley, basil, or chives)
- 1 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
Instructions
- Preheat the oven to 375°F (190°C).
- Slice the mini peppers in half lengthwise and remove the seeds and membranes.
- In a small bowl, mix together the goat cheese, cream cheese, chopped herbs, garlic powder, salt, and pepper until well combined.
- Spoon or pipe the cheese mixture into the hollowed-out mini pepper halves.
- Arrange the stuffed peppers on a baking sheet lined with parchment paper.
- Bake for 12-15 minutes, or until the peppers are tender and the cheese is lightly browned.
