- 2 medium carrots, peeled, sliced
- 2 ribs celery, diced
- 2 teaspoons garlic, minced
- 1 teaspoon ground turmeric

- ¼ teaspoon ground cumin
- 6 cups (48 ounces) chicken broth
- 1 ½ pounds boneless skinless chicken breasts, cut into bite-sized cubes
- 6 ounces egg noodles
- 1 can (13.5 ounces) unsweetened coconut milk
- Kosher salt and black pepper, to taste
- Fresh parsley, for garnish
Instructions
- In a large pot over medium heat, heat the olive oil until hot and shimmering. Add the diced onion, sliced carrots, and diced celery. Cook the vegetables until softened and the onion becomes translucent, approximately 5 to 6 minutes.
- Stir in the minced garlic, ground turmeric, ground ginger, and ground cumin. Continue cooking and stirring for an additional minute to allow the spices to release their aroma.
- Pour in the chicken broth, stirring to combine all ingredients. Add the bite-sized chicken breast pieces and bring the mixture to a low simmer.
- Cover the pot and let the soup simmer for 15 to 20 minutes, or until the chicken is fully cooked and reaches an internal temperature of 165°F (74°C).
- Stir in the egg noodles and the unsweetened coconut milk. Simmer uncovered for 6 to 8 minutes, stirring occasionally, until the egg noodles are tender.
- Season the soup with kosher salt and freshly ground black pepper to taste. Ladle the soup into bowls and garnish with fresh parsley before serving hot.
