  • 1 bundle (6 to 8 ounces) scallions, thinly sliced with whites and greens separated
  • 4 teaspoons kosher salt
  • Freshly ground white or black pepper, to taste
  • 10 cups water
  • 8 ounces dried ramen-style noodles
  • 1 cup sliced carrot, cut into thin matchsticks
  • 1/4 cup black rice vinegar
  • 1/4 cup soy sauce
  • 2 tablespoons toasted sesame oil
  • Crispy chili oil, to taste

Instructions

  1. In a 4 to 5-quart pot, combine the chicken thighs, sliced garlic, finely chopped ginger, scallion whites (reserving the greens for garnish), kosher salt, freshly ground pepper, and water. Bring the mixture to a rolling boil, then reduce the heat to medium-low and allow it to simmer, uncovered, stirring periodically. Continue simmering for approximately 15 minutes, or until the chicken is thoroughly cooked and exceptionally tender.
  2. While the chicken broth simmers, prepare the accompanying sauce. In a small bowl, whisk together the black rice vinegar, soy sauce, and toasted sesame oil. Incorporate crispy chili oil according to your preferred level of spice.
  3. Carefully remove the cooked chicken thighs from the pot using tongs and transfer them to a cutting board. Add the ramen-style noodles and matchstick carrots to the simmering broth, cooking them according to the package instructions. Meanwhile, use two forks to shred the chicken into uniform bite-sized pieces. Once the noodles are al dente, return the shredded chicken to the pot and gently rewarm for one minute. Taste the broth and adjust seasoning as necessary.
  4. Ladle the finished ginger garlic chicken noodle soup into individual serving bowls. Garnish each bowl generously with the reserved scallion greens and drizzle with approximately 1 tablespoon of the prepared soy sauce mixture. Serve immediately, adding additional sauce to taste.
