- 3 tablespoons olive oil

Instructions
- Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
- Wash and scrub sweet potatoes clean; pat dry thoroughly to ensure crispiness.
- Cut each sweet potato in half lengthwise, then slice each half into 3-4 wedges, aiming for 1/2 to 3/4 inch thick pieces for even cooking.
- Mince 4-6 cloves of fresh garlic very finely.
- In a large bowl, combine sweet potato wedges, 3 tbsp olive oil, minced garlic, 1/2 cup freshly grated Parmesan cheese, 1 tsp Italian seasoning, 1/2 tsp salt, and 1/4 tsp black pepper.
- Toss thoroughly with clean hands until every wedge is evenly coated with the seasoning mixture.
- Arrange seasoned wedges in a single layer on the prepared baking sheet, ensuring space between each piece to prevent steaming.
- Bake for 25-35 minutes at 400°F (200°C). Bake undisturbed for the first 15-20 minutes, then flip the wedges and continue baking for another 10-15 minutes, or until fork-tender inside and golden brown and crispy outside.
- Remove from oven. Optionally, sprinkle with extra freshly grated Parmesan cheese and finely chopped fresh parsley or chives for garnish.
