Ingredients

- 4 tablespoons extra-virgin olive oil
- 4 cloves garlic, minced or pressed
- ½ teaspoon dried oregano
- ½ teaspoon dried basil
- ½ teaspoon Kosher salt
- ¼ teaspoon freshly ground black pepper
- Zest of 1 lemon
- 2 pounds shrimp, peeled and deveined
- ½ cup grated Parmesan cheese
- 2 tablespoons chopped fresh Italian parsley, for garnish
Instructions
- Combine the extra-virgin olive oil, minced garlic, dried oregano, dried basil, Kosher salt, freshly ground black pepper, and lemon zest in a large bowl.
- Add the peeled and deveined shrimp to the bowl with the marinade base. Toss gently to ensure all shrimp are thoroughly coated.
- Cover the bowl tightly with plastic wrap and refrigerate for 1 to 3 hours, allowing the flavors to meld.
- Preheat your oven to 400°F.
- Remove the shrimp from the refrigerator. Add the grated Parmesan cheese to the bowl with the marinated shrimp and toss to distribute evenly.
- Pour the seasoned shrimp mixture onto a 13×9 inch Pyrex baking dish or a large baking sheet, spreading them into a single layer for even cooking.
- Roast in the preheated oven for approximately 8 minutes, or until the shrimp turn opaque pink, become firm, and are fully cooked through.
- Once removed from the oven, garnish the roasted shrimp with an additional drizzle of extra-virgin olive oil and the chopped fresh Italian parsley before serving immediately.
