Ingredients

  • 4 cloves garlic, minced or pressed
  • ½ teaspoon dried oregano
  • ½ teaspoon dried basil
  • ½ teaspoon Kosher salt
  • ¼ teaspoon freshly ground black pepper
  • Zest of 1 lemon
  • 2 pounds shrimp, peeled and deveined
  • ½ cup grated Parmesan cheese
  • 2 tablespoons chopped fresh Italian parsley, for garnish

Instructions

  1. Combine the extra-virgin olive oil, minced garlic, dried oregano, dried basil, Kosher salt, freshly ground black pepper, and lemon zest in a large bowl.
  2. Add the peeled and deveined shrimp to the bowl with the marinade base. Toss gently to ensure all shrimp are thoroughly coated.
  3. Cover the bowl tightly with plastic wrap and refrigerate for 1 to 3 hours, allowing the flavors to meld.
  4. Preheat your oven to 400°F.
  5. Remove the shrimp from the refrigerator. Add the grated Parmesan cheese to the bowl with the marinated shrimp and toss to distribute evenly.
  6. Pour the seasoned shrimp mixture onto a 13×9 inch Pyrex baking dish or a large baking sheet, spreading them into a single layer for even cooking.
  7. Roast in the preheated oven for approximately 8 minutes, or until the shrimp turn opaque pink, become firm, and are fully cooked through.
  8. Once removed from the oven, garnish the roasted shrimp with an additional drizzle of extra-virgin olive oil and the chopped fresh Italian parsley before serving immediately.
