- 1.5 pounds ground chicken
- 3/4 cup Italian breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1/3 cup minced yellow onion
- 4 cloves minced garlic
- 1 large egg
- 1/4 cup whole milk
- 3 tablespoons chopped fresh parsley
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup shredded Parmesan cheese
Instructions
- Preheat your oven to 350°F. Lightly coat a 9x5x2-inch loaf pan with a nonstick cooking spray.
- In a spacious mixing bowl, combine the ground chicken, Italian breadcrumbs, grated Parmesan cheese, minced yellow onion, minced garlic, large egg, whole milk, 2 tablespoons of chopped fresh parsley, salt, and black pepper.
- Using clean hands or a sturdy spoon, thoroughly mix all ingredients until uniformly combined.
- Shape the meat mixture into a cohesive loaf and carefully transfer it into the prepared loaf pan. Evenly sprinkle the 1/2 cup of shredded Parmesan cheese and the remaining 1 tablespoon of fresh chopped parsley over the top.
- Bake the meatloaf in the preheated oven for 60 minutes. For the final 2 minutes, switch to broil setting to achieve a golden-brown crust. Monitor closely to prevent over-browning.
