Garlic Herb Chicken & Carrot Plate is a quick and easy 30-minute meal featuring marinated chicken breasts and caramelized carrots.

- 1.5 pounds boneless, skinless chicken breasts
- 1 pound carrots, peeled and cut into 1-inch pieces
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat oven to 400°F.
- In a large resealable bag, combine the chicken, carrots, garlic, olive oil, thyme, rosemary, salt, and pepper. Seal the bag and shake to coat the chicken and carrots evenly.
- Spread the chicken and carrots onto a large baking sheet, making sure they are in a single layer.
- Roast for 25-30 minutes, or until the chicken is cooked through and the carrots are tender.
- Serve the Garlic Herb Chicken & Carrot Plate immediately, garnished with additional fresh herbs if desired.
