  • 1 lb potato gnocchi
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 cup chicken broth
  • 2 tbsp olive oil
  • 6 cloves garlic, minced
  • Fresh basil leaves for garnish
  • 1 tsp dried Italian herbs
  • Salt and freshly ground black pepper to taste

Instructions

  1. Heat the olive oil in a large skillet over medium-high heat. Add the chicken pieces and season with salt, black pepper, and dried Italian herbs. Cook the chicken until golden brown and fully cooked through, about 6-8 minutes. Remove the chicken from the skillet and set aside.
  2. In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant, being careful not to burn it to preserve its flavor.
  3. Pour in the chicken broth and use a wooden spoon to scrape up any browned bits from the bottom of the pan, enhancing the sauce’s flavor.
  4. Add the potato gnocchi to the skillet and bring the mixture to a simmer. Cook for 3 to 4 minutes, stirring occasionally, until the gnocchi starts to soften and become tender.
  5. Reduce the heat to medium-low and stir in the heavy cream. Let the sauce simmer gently for another 2 to 3 minutes until it thickens slightly.
  6. Return the cooked chicken to the skillet along with the grated Parmesan cheese. Stir well until the cheese is melted and the chicken is warmed through.
