  • 1 lb chicken fillet, cut into 1-inch bites
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 cup fresh spinach, chopped
  • 1/2 cup artichoke hearts, chopped
  • 8 oz fettuccine pasta
  • 1 tbsp Cajun seasoning
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Cook fettuccine pasta according to package directions. Drain and set aside, reserving about 1/2 cup of pasta water.
  2. Heat olive oil in a large skillet over medium heat.
  3. Add chicken bites in a single layer and cook for 3-4 minutes until golden brown on one side. Flip and cook for another 3-4 minutes until mostly cooked through.
  4. Add minced garlic and Cajun seasoning to the chicken. Stir for 30 seconds until fragrant.
  5. Pour in heavy cream and bring to a gentle simmer.
  6. Gradually add grated Parmesan cheese, stirring constantly until melted and the sauce is silky.
  7. Fold in chopped spinach and artichoke hearts. Cook until spinach wilts, about 1 minute.
  8. Add the drained pasta to the skillet with the sauce. Toss well to coat every strand. If the sauce is too thick, add a splash of reserved pasta water to loosen it.
  9. Season with salt and pepper to taste.
  10. Serve immediately.
