Ingredients
- 2 cups all-purpose flour

- 4–6 cups vegetable oil for deep frying
- 1 cup powdered sugar for dusting
Instructions
- Heat oil in a heavy-bottomed pot to 3-4 inch depth. Heat to 375°F using a candy thermometer.
- In a large bowl, whisk together flour, sugar, baking powder, and salt until well combined.
- In a separate bowl, whisk eggs, milk, melted butter, and vanilla extract until smooth.
- Pour wet mixture into dry ingredients and stir until just combined. Don’t overmix – a few lumps are fine.
- Test oil temperature by dropping a small amount of batter into oil – it should sizzle immediately and float.
- Using a cookie scoop or spoon, drop tablespoon-sized portions into hot oil. Fry 6-8 pieces at a time for 2-3 minutes until golden brown.
- Remove with slotted spoon and transfer to paper towel-lined plate. Let drain for 1-2 minutes.
- While still warm, generously dust with powdered sugar using a fine-mesh sieve.
