- 1 medium head of green cabbage, chopped
- 1 pound ground beef or turkey
- 1 onion, diced
- 1 bell pepper, diced (any color)
- 2 cloves garlic, minced
- 1 can (15 oz) diced tomatoes, undrained
- 1 can (15 oz) kidney beans, rinsed and drained
- 1 cup corn kernels (fresh, frozen, or canned)
- 1 packet taco seasoning
- 1 cup shredded cheese (cheddar or Mexican blend)
- 2 cups Fritos corn chips
- Salt and pepper to taste
- Optional toppings: sour cream, green onions, jalapeños
Instructions
- In a large skillet or pot, cook the ground beef or turkey over medium heat until browned. Drain excess fat if necessary.
- Add the diced onion, bell pepper, and minced garlic to the skillet. Sauté for about 5 minutes, or until the vegetables are tender.
- Stir in the chopped cabbage and cook for an additional 5 minutes, allowing it to wilt slightly.
- Add the diced tomatoes (with juice), kidney beans, corn, and taco seasoning. Stir well to combine all ingredients.
- Reduce heat to low, cover, and let simmer for about 15-20 minutes. Stir occasionally until the cabbage is tender.
- Once the cabbage is cooked, sprinkle the shredded cheese on top and cover for a few minutes to allow it to melt.
- Just before serving, add the Fritos corn chips on top for that signature crunch.
- If desired, sprinkle with optional toppings like sour cream, green onions, or jalapeños for extra flavor.
