Description

A bright, vibrant, and healthy Mediterranean salad combining raw grated beets, creamy feta, and protein-packed chickpeas with a zesty lemon dressing.


Ingredients

  • 2 medium fresh beets, peeled and grated
  • 1 can (15 oz / 425g) canned chickpeas, drained and rinsed
  • 4 oz (110g) feta cheese, crumbled
  • ¼ small red onion, thinly sliced
  • ¼ cup fresh parsley, chopped
  • 2 tablespoons fresh lemon juice
  • 3 tablespoons extra virgin olive oil
  • 1 small garlic clove, minced
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Peel and grate the fresh beets using a box grater or food processor. Set aside in a large mixing bowl.
  2. Drain and rinse the canned chickpeas under cold water. Shake off excess water and add to the bowl with the beets.
  3. Thinly slice about a quarter of a small red onion and add to the bowl.
  4. Wash, dry, and finely chop the parsley. Add to the bowl.
  5. In a small bowl, whisk together lemon juice, olive oil, minced garlic, salt, and pepper to make the dressing.
  6. Pour the dressing over the beet mixture and toss gently to combine without bruising the beets.
  7. Sprinkle the crumbled feta on top and lightly toss to distribute.
  8. Taste and adjust seasoning with additional salt, pepper, or lemon juice if needed.
  9. Optional: Let the salad chill in the fridge for 10-15 minutes before serving to allow flavors to meld.
