Description
A bright, vibrant, and healthy Mediterranean salad combining raw grated beets, creamy feta, and protein-packed chickpeas with a zesty lemon dressing.
Ingredients

- 2 medium fresh beets, peeled and grated
- 1 can (15 oz / 425g) canned chickpeas, drained and rinsed
- 4 oz (110g) feta cheese, crumbled
- ¼ small red onion, thinly sliced
- ¼ cup fresh parsley, chopped
- 2 tablespoons fresh lemon juice
- 3 tablespoons extra virgin olive oil
- 1 small garlic clove, minced
- Salt and freshly ground black pepper, to taste
Instructions
- Peel and grate the fresh beets using a box grater or food processor. Set aside in a large mixing bowl.
- Drain and rinse the canned chickpeas under cold water. Shake off excess water and add to the bowl with the beets.
- Thinly slice about a quarter of a small red onion and add to the bowl.
- Wash, dry, and finely chop the parsley. Add to the bowl.
- In a small bowl, whisk together lemon juice, olive oil, minced garlic, salt, and pepper to make the dressing.
- Pour the dressing over the beet mixture and toss gently to combine without bruising the beets.
- Sprinkle the crumbled feta on top and lightly toss to distribute.
- Taste and adjust seasoning with additional salt, pepper, or lemon juice if needed.
- Optional: Let the salad chill in the fridge for 10-15 minutes before serving to allow flavors to meld.
