Instructions
- Prepare the Apples: Peel, core, and dice your apples into ½-inch pieces.
- Cook the Compote Base: In a medium saucepan, combine the diced apples, maple syrup (or honey), lemon juice, lemon zest, cinnamon (if using), and a tiny pinch of salt. Stir to coat everything.
- Simmer to Perfection: Place the saucepan over medium heat. Bring the mixture to a gentle simmer, then reduce the heat to low, cover, and cook for about 10-12 minutes. Stir occasionally.
- Add the Berries: Once the apples are tender, remove the lid and stir in your fresh mixed berries. Cook uncovered for another 3-5 minutes, then remove from heat and let it cool slightly.
- Prepare the Citrus Yogurt Swirl: In a small bowl, combine the plain Greek yogurt, confectioners’ sugar (if using), and vanilla extract. Stir until smooth.
- Assemble Your Desserts: Spoon a layer of the warm (or cooled) apple and berry compote into the bottom of each dessert glass.
- Layer and Swirl: Dollop a spoonful of the yogurt mixture over the compote. Repeat with another layer of compote and yogurt, ending with yogurt on top.
- Chill and Garnish: Refrigerate for at least 30 minutes. Garnish each with fresh mint leaves before serving.
