Deliciously Light French Strawberry Cake for Any Celebration

- 1 cup Unsalted butter
- 1 cup Granulated sugar
- 3 Large eggs
- 1 teaspoon Vanilla extract
- 2 cups All-purpose flour
- 2 teaspoons Baking powder
- 1 teaspoon Salt
- 1 cup Sour cream
- 2 cups Fresh strawberries
Instructions
- Preheat your oven to 350°F (175°C). Spray a 9-inch round cake pan with cooking spray, ensuring it’s well-coated to prevent sticking.
- Whip together the softened butter and 1 cup of the granulated sugar in a stand mixer bowl. Beat until the mixture is pale and fluffy—this should take about 5 to 7 minutes.
- Add the eggs individually, mixing well after each addition. Incorporate the vanilla extract.
- Combine in a separate bowl the flour, baking powder, and salt. Gradually mix this flour mixture into the butter mixture, alternating with the sour cream.
- Fold in the sliced fresh strawberries gently. Spread the batter evenly in the prepared cake pan.
- Sprinkle the remaining 1/4 cup of sugar evenly on top of the batter.
- Bake in the preheated oven for 35-40 minutes, or until a wooden pick inserted into the center comes out clean.
- Cool the cake completely in the pan before slicing and serving it directly from the pan.
Notes
- This cake can be served with whipped cream for added richness.
- Store leftovers in an airtight container at room temperature for up to 3 days.
