Instructions

  1. Preheat your oven to 350°F (175°C). Spray a 9-inch round cake pan with cooking spray, ensuring it’s well-coated to prevent sticking.
  2. Whip together the softened butter and 1 cup of the granulated sugar in a stand mixer bowl. Beat until the mixture is pale and fluffy—this should take about 5 to 7 minutes.
  3. Add the eggs individually, mixing well after each addition. Incorporate the vanilla extract.
  4. Combine in a separate bowl the flour, baking powder, and salt. Gradually mix this flour mixture into the butter mixture, alternating with the sour cream.
  5. Fold in the sliced fresh strawberries gently. Spread the batter evenly in the prepared cake pan.
  6. Sprinkle the remaining 1/4 cup of sugar evenly on top of the batter.
  7. Bake in the preheated oven for 35-40 minutes, or until a wooden pick inserted into the center comes out clean.
  8. Cool the cake completely in the pan before slicing and serving it directly from the pan.
