Ingredients

Scale
  • 32 ounces frozen cubed hash browns (thawed)
  • ¼ cup unsalted butter (melted)
  • 2 cups sharp cheddar cheese (shredded)
  • 1 ½ cups sour cream
  • 1 small yellow onion (diced)
  • 2 teaspoons garlic (minced)
  • ¼ cup all-purpose flour
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • ½ teaspoon cayenne pepper
  • ½ teaspoon dried mustard
  • ½ cup chicken broth
  • ½ cup whole milk
  • 2 large yellow onions (thinly sliced (about 4 cups))
  • 4 cups vegetable oil (for frying)
  • ½ teaspoon kosher salt

Instructions

  1. Preheat your oven to 350°F. Spray a 9×13-inch baking dish with nonstick spray.
  2. Combine the thawed hash browns, melted butter, shredded cheddar cheese, and sour cream in a large bowl. Mix well.
  3. Melt ¼ cup butter in a medium non-stick skillet over medium heat.
  4. Cook the diced onions for 3-5 minutes until softened. Add the minced garlic and cook for an additional minute.
  5. Stir in the flour, kosher salt, black pepper, cayenne pepper, and dried mustard. Cook for another minute.
  6. Whisk in the milk and chicken broth slowly, stirring continually until well combined.
  7. Mix the thickened sauce into the potato mixture and stir until evenly combined. Pour into the prepared baking dish.
  8. Bake for 45-50 minutes, or until bubbly and heated through.
  9. Prepare the fried onions while the casserole bakes. Line a large baking sheet with paper towels.
  10. Heat the vegetable oil in a large saucepan over high heat to 350°F.
  11. Fry about 1 cup of sliced onions in batches until pale golden brown, about 2-5 minutes.
  12. Remove fried onions using a fine mesh strainer and place them on the lined baking sheet.
  13. Sprinkle cooled fried onions with kosher salt, gently tossing to coat.
  14. Top the baked casserole with fried onions immediately after removing from the oven.
  15. Serve hot and enjoy.
