- 4 large yellow onions, sliced
- 2 cups low-sodium beef broth
- 1 cup red wine
- 2 tsp fresh thyme

Instructions
- Preheat your oven to 300°F (150°C). Heat olive oil in a large Dutch oven over medium heat.
- Sauté sliced onions for about 20 minutes until golden brown and caramelized. Remove from the pot.
- Brown the seasoned chuck roast in the same pot for 5-7 minutes on all sides until a crust forms.
- Deglaze with red wine, scraping up any browned bits from the bottom.
- Return the onions to the pot, add beef broth and thyme, and bring to a simmer.
- Cover and transfer to the preheated oven. Cook for about three hours or until fork-tender.
