- 4 fish fillets (e.g., mahi, cod, halibut, or tilapia)
- 1 tablespoon olive oil
- 2 tablespoons unsalted butter, divided
- 1 cup chopped yellow onion
- 3 large cloves garlic, minced
- 1 (14-ounce) can crushed tomatoes
- 1 (14-ounce) can drained diced roasted tomatoes (tomato sauce can be substituted)
- 1/4 cup heavy cream or half-and-half
- 2 teaspoons Italian seasoning blend (or 1 teaspoon dried basil and 1 teaspoon dried oregano)
- Salt, to taste
- Freshly ground black pepper, to taste
- Feta or Parmesan cheese, crumbled or grated
Instructions
- Heat a large skillet over medium-high heat. Add 1 tablespoon of olive oil and 1 tablespoon of butter, swirling to evenly coat the pan.
- Pat the fish fillets thoroughly dry with paper towels. Season generously with salt and freshly ground black pepper. Carefully place the seasoned fish into the hot skillet. Allow to sear undisturbed for 3-4 minutes until a golden crust forms and the fish releases easily from the pan. Flip and sear the other side for another 2-3 minutes.
- Transfer the seared fish fillets to a plate and keep them warm, loosely covered.
- Reduce the heat to medium. Add the remaining 1 tablespoon of butter to the skillet. Introduce the chopped onions and sauté for 2-3 minutes until tender and translucent. Add the minced garlic and stir for another minute until fragrant.
- Incorporate the crushed tomatoes, drained diced roasted tomatoes, heavy cream, and Italian seasoning into the skillet. Stir well to combine. Season the sauce with salt and pepper to taste. Gently return the seared fish fillets to the pan, ensuring they are partially submerged in the sauce.
- Continue to cook for an additional 10 minutes, or until the fish is cooked through and reaches an internal temperature of 145°F.
- Serve the fish immediately, with a side of pasta or rice if desired, and garnish with crumbled feta or grated Parmesan cheese.
