Description
This easy oatmeal fig walnut cake is flourless, easy to prepare and super tasty. It’s a great everyday dessert to make with figs that everyone will love.

- 3oz/80g butter, melted
- 3 eggs
- 1 tsp cinnamon
- 1/3 cup dark brown sugar
- 2 cups oats, ground
- 1/4 cup walnuts, ground
- 1 tsp apple cider vinegar
- 1/2 tsp baking soda
- 1 1/2 cup figs, thinly chopped
- 1 tsp vanilla
- 1 tbsp coconut oil
- 1 tbsp water
- 1/4 cup walnuts, chopped
Instructions
- Wash and chop the fresh figs into small pieces. Add to a pan with some coconut oil and a little bit of water. Heat up and stir occasionally for 5 minutes.
- Grind the oats and walnuts in a blender or coffee/nut grinder.
- In a bowl, mix melted butter with half of the sautéed figs. Add eggs, cinnamon, baking soda, and apple cider vinegar. Mix in sugar, ground oats, and walnuts. Add more figs and chopped walnuts for texture.
- Preheat oven to 180C/350F.
- Line a baking pan with parchment paper and spread the mixture.
- Drop sautéed figs on top of the cake mixture in clusters. Add some chopped walnuts.
- Bake for 25-30 minutes or until a toothpick comes out clean.
- Let cool off and enjoy! Store leftovers in an airtight container in the fridge for up to 5 days.

- Feel free to add a pinch of salt to the sautéed figs.
