Ingredients

  • 10 ounces of Spring Mix
  • 1 cup cilantro lime rice
  • 1/2 cup Roma tomatoes
  • 1/2 cup black beans, rinsed & drained
  • 1/2 cup of sharp shredded cheese
  • 3/4 cup of Cilantro Lime Dressing
  • 1/2 cup corn
  • 1/2 cup bell peppers, diced
  • 1/4 cup red onions

Instructions

  1. In a large salad bowl, layer lettuce, cilantro lime rice, tomatoes and black beans.
  2. Add corn, bell peppers, red onions and cheese.
  3. Top salad with cilantro lime dressing.
  4. Serve as is or toss salad before serving.
