Ingredients

- 10 ounces of Spring Mix
- 1 cup cilantro lime rice
- 1/2 cup Roma tomatoes
- 1/2 cup black beans, rinsed & drained
- 1/2 cup of sharp shredded cheese
- 3/4 cup of Cilantro Lime Dressing
- 1/2 cup corn
- 1/2 cup bell peppers, diced
- 1/4 cup red onions
Instructions
- In a large salad bowl, layer lettuce, cilantro lime rice, tomatoes and black beans.
- Add corn, bell peppers, red onions and cheese.
- Top salad with cilantro lime dressing.
- Serve as is or toss salad before serving.
