- 8 medium button mushrooms
- 2 tablespoons crumbled feta cheese
- 1 1/2 teaspoons chopped fresh Italian parsley
- 1 teaspoon freshly squeezed lemon juice
- 1/2 teaspoon grated lemon zest
- 1/2 teaspoon olive oil
- 1/8 teaspoon ground cayenne pepper
Instructions
- Preheat your oven to 425°F. Lightly coat a small baking dish with nonstick cooking spray.
- Gently rinse the mushrooms and pat them thoroughly dry with paper towels. Carefully remove the stems from all mushrooms; set aside two stems. Finely mince the tender sections of these two reserved mushroom stems and transfer them to a small mixing bowl. Arrange the hollowed mushroom caps, stem-side facing upwards, in the prepared baking dish.
- Combine the crumbled feta cheese, chopped Italian parsley, lemon juice, lemon zest, olive oil, and cayenne pepper with the minced mushroom stems in the bowl. Stir vigorously until all ingredients are well combined. Using a small spoon, evenly distribute the filling mixture among the mushroom caps, mounding it slightly in the center of each.
- Bake for 13 to 15 minutes, or until the mushroom caps are tender and the filling is heated through and gently sizzling. Allow the stuffed mushrooms to cool for a few moments before serving.
