Ingredients

  • 4 cups mixed salad greens (arugula, spinach, or baby kale)
  • 1 cup butternut squash, diced
  • 1 cup cooked chicken breast, diced
  • 1/2 cup crumbled blue cheese
  • 1/2 cup cooked bacon, chopped
  • 1/2 cup green apples, diced
  • 1/4 cup balsamic vinaigrette dressing

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss diced butternut squash with olive oil, salt, and pepper. Spread on a baking sheet in a single layer.
  3. Bake the squash for 20 minutes or until tender and slightly caramelized. Remove and let cool for a few minutes.
  4. In a large bowl, layer the mixed salad greens as a base.
  5. Distribute the diced cooked chicken evenly over the greens.
  6. Add the roasted butternut squash, crumbled blue cheese, chopped bacon, and diced green apples on top of the salad greens and chicken.
  7. Drizzle the balsamic vinaigrette dressing over the salad.
  8. Gently toss the salad to combine all the ingredients and flavors. Serve immediately.
