Incredible Fall Cobb Salad with a mix of fresh ingredients.
Ingredients

- 4 cups mixed salad greens (arugula, spinach, or baby kale)
- 1 cup butternut squash, diced
- 1 cup cooked chicken breast, diced
- 1/2 cup crumbled blue cheese
- 1/2 cup cooked bacon, chopped
- 1/2 cup green apples, diced
- 1/4 cup balsamic vinaigrette dressing
Instructions
- Preheat your oven to 400°F (200°C).
- Toss diced butternut squash with olive oil, salt, and pepper. Spread on a baking sheet in a single layer.
- Bake the squash for 20 minutes or until tender and slightly caramelized. Remove and let cool for a few minutes.
- In a large bowl, layer the mixed salad greens as a base.
- Distribute the diced cooked chicken evenly over the greens.
- Add the roasted butternut squash, crumbled blue cheese, chopped bacon, and diced green apples on top of the salad greens and chicken.
- Drizzle the balsamic vinaigrette dressing over the salad.
- Gently toss the salad to combine all the ingredients and flavors. Serve immediately.
