Ingredients

  • 2¼ cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 tablespoons instant espresso powder
  • 1 cup unsalted butter (softened)
  • ¾ cup granulated sugar
  • ¾ cup packed brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups semi-sweet chocolate chips
  • Sea salt for sprinkling (optional)

Instructions

  1. Start by getting butter right – it should be soft enough that your finger leaves a slight indent when pressed, but not so warm that it’s starting to melt.
  2. Preheat your oven to 350°F and line two baking sheets with parchment paper.
  3. In a medium bowl, whisk together the flour, baking soda, salt, and espresso powder.
  4. In a large bowl, beat the softened butter for about 30 seconds until it’s creamy. Add both sugars and beat until light and fluffy – about 2-3 minutes.
  5. Add the eggs one at a time, beating well after each addition. Scrape down the sides of the bowl with a spatula.
  6. Gradually add the flour mixture to your butter mixture, mixing on low speed until just combined.
  7. Fold in the chocolate chips by hand using a spatula.
  8. Drop rounded tablespoons of dough onto your prepared baking sheets, leaving about 2 inches between each cookie.
  9. If you’re using the sea salt, sprinkle a few flakes on top of each cookie dough ball.
  10. Bake for 10-12 minutes, rotating the pans halfway through.
  11. Let the cookies cool on the baking sheets for 5 minutes, then transfer them to a wire rack to cool completely.
