  • ½ tsp vanilla extract (optional)
  • 1618 small breakfast sausage links
  • or 250300 g sausage, cooked and cut into pieces
  • Maple syrup
  • Honey
  • Powdered sugar
  • Butter

Instructions

  1. Cook the Sausage
  2. Heat a pan over medium heat.
  3. Cook sausage links until browned and fully cooked.
  4. Transfer to a plate and let cool slightly.
  5. Prepare the Batter
  6. In a bowl, whisk together flour, sugar, baking powder, and salt.
  7. Add milk, egg, melted butter, and vanilla.
  8. Mix until smooth (do not overmix).
  9. Assemble
  10. Option A – Muffin Style
  11. Preheat oven to 375°F (190°C).
  12. Grease a mini muffin pan.
  13. Fill each cavity halfway with batter.
  14. Place one sausage piece in each.
  15. Cover with a small amount of batter.
  16. Option B – Pancake Style
  17. Heat a non-stick pan over medium heat.
  18. Pour small circles of batter.
  19. Place sausage in center.
  20. Add a little more batter on top.
  21. Cook
  22. Oven method: bake 15–18 minutes until golden.
  23. Pan method: cook 2–3 minutes per side until golden brown.
  24. Serve
  25. Serve warm with maple syrup or honey.
