- 1 tablespoon vegan butter
- 1 teaspoon salt

- ½ sheet nori
- 3 tablespoons soy sauce
- 2 tablespoons brown sugar
- 2 tablespoons mirin
Instructions
- Peel and Dice: Start by peeling the potatoes and cutting them into 1-inch cubes.
- Boil Potatoes: Place the diced potatoes in a large pan and cover them with water. Boil until soft, about 15 minutes.
- Drain Well: Once the potatoes are tender, drain them thoroughly.
- Mash Potatoes: Use a masher or fork to turn the drained potatoes into a smooth mash.
- Mix Ingredients: Add the potato starch, vegan butter, and salt to your mashed potatoes. Stir well.
- Shape Mochi: Scoop out ¼ cup of the mixture and gently shape it into a smooth disc.
- Heat Oil: In a frying pan, heat the oil over medium heat.
- Fry Mochi: Carefully add the shaped mochi, frying each side until golden brown, about 3-4 minutes per side.
- Prepare Dipping Sauce: In a small pan, mix the soy sauce, brown sugar, and mirin. Heat gently until the sugar dissolves.
- Dip Mochi: Take each fried mochi and dip it into the warm dipping sauce.
- Wrap with Nori: Wrap a small strip of nori around the bottom of each mochi.
