Easy Homemade Beef Stew

- 2 lbs beef chuck, cut into 1½-inch cubes
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 tablespoons all-purpose flour
- 1 large yellow onion, diced
- 3 cloves garlic, minced
- 2 tablespoons tomato paste
- 4 cups beef broth
- 1 cup dry red wine
- 4 medium carrots, cut into chunks
- 1½ lbs Yukon Gold potatoes, cubed
- 2 celery stalks, sliced
- 1 cup peas
- 1 teaspoon dried thyme
- 1 bay leaf
- 1 teaspoon paprika
- 1 teaspoon Worcestershire sauce
- 1 tablespoon balsamic vinegar
- 2 tablespoons fresh parsley, chopped
Instructions
- Pat the beef dry and season with salt and pepper. Toss with flour until evenly coated.
- Heat olive oil in a large Dutch oven over medium-high heat. Sear beef in batches until browned. Remove and set aside.
- Sauté onion for 4–5 minutes. Add garlic and cook briefly. Stir in tomato paste and cook 1–2 minutes.
- Deglaze with red wine and scrape browned bits. Simmer 2–3 minutes.
- Return beef to pot. Add broth, Worcestershire sauce, paprika, thyme, and bay leaf. Bring to gentle boil.
- Reduce heat and simmer 60–90 minutes.
- Add carrots, potatoes, and celery. Simmer 30–40 minutes.
- Stir in peas during final 5–10 minutes.
- Add balsamic vinegar, adjust seasoning, rest 10–15 minutes, garnish with parsley, and serve.
