Description

  • 2 tubes (8 oz each) refrigerated crescent roll dough
  • 8 large eggs, scrambled
  • 1 cup shredded cheddar cheese
  • 8 oz breakfast sausage, cooked and crumbled
  • 4 strips bacon, cooked and chopped (optional)
  • 1/4 cup cream cheese, softened
  • 2 tablespoons butter
  • 1/4 cup green onions, chopped
  • Salt and black pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Cook the sausage in a large skillet over medium heat until browned and crumbled, about 6-8 minutes. Remove and set aside.
  3. Cook bacon until crispy, then chop into small pieces.
  4. Prepare scrambled eggs: Whisk eggs with cream cheese, salt, and pepper. Cook in butter over medium-low heat, stirring constantly until just set.
  5. Combine filling: Mix scrambled eggs, sausage, bacon, cheese, and green onions in a large bowl.
  6. Assemble rolls: Unroll crescent dough, place 2-3 tablespoons filling on wide end of each triangle, and roll up carefully.
  7. Bake: Place seam-side down on baking sheet and bake 18-22 minutes until golden brown.
  8. Serve: Let cool for 5 minutes before serving warm.

Notes

For make-ahead convenience, assemble rolls and refrigerate overnight, then bake fresh in the morning (add 2-3 extra minutes). Store leftovers in refrigerator for up to 4 days. Reheat in 350°F oven for 5-7 minutes to restore crispiness.
