Description
Easy ABC Soup made with pork, vegetables, and broth.
Ingredients
Scale
- 1 lb pork shoulder (diced into 2-inch cubes or use whole bone-in chicken thighs or drumsticks)
- 2 medium tomatoes (quartered into wedges)
- 1 large carrot (sliced into 1-inch-thick pieces)
- 2 corn on the cob (chopped into 2-inch-thick pieces)
- 1 onion (roughly chopped)
- 2 medium Yellow potatoes (or yukon gold / white potatoes – quartered)
- 10 cups water (cold or room temp)
- 1/2 tsp chicken bouillon powder
- 1 tsp salt (or add to taste)
- 1 green onion (finely chopped, optional garnish)
Instructions
- Bring a large pot filled halfway with water to boil on medium-high heat. Add chopped pork and boil for 3-5 minutes until the scum surfaces.
- Discard the cloudy water, rinse the meat and pot to remove impurities. Add the meat back to the pot.
- Add carrots, tomatoes, potatoes, corn, onions, and water to the pot.
- If cooking on the stovetop: Cover and bring to a boil on medium-high heat. Then reduce to low-medium heat simmering for 1 1/2 to 2 hours, occasionally skimming off any scum from the surface. If using a Pressure Cooker: seal the lid and valve and cook on high pressure for 45 minutes. Let the pressure naturally release for 20-30 minutes if you have time or do a quick release.
- Skim the soup to remove any oil or scum that surfaces. Season with chicken bouillon powder and salt to taste.
- Serve and garnish with green onions. Enjoy!
