  • 1 1/4 cups boxed yellow cake mix
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 3/4 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar, packed
  • 1 large egg, room temperature
  • 1 1/2 teaspoons vanilla extract
  • 1 1/2 cups Easter M&M’s or seasonal color of choice
  • 1/2 cup Easter sprinkles or seasonal color of choice

Instructions

  1. Sift together the all-purpose flour, boxed yellow cake mix, baking soda, and kosher salt into a medium bowl and set aside.
  2. In a large bowl or using a stand mixer with a paddle attachment, beat the softened butter along with granulated sugar and light brown sugar until light and fluffy, about 2 to 3 minutes.
  3. Add in the room temperature egg and beat on high speed for 1 minute, then pour in the vanilla extract.
  4. Gradually add the sifted dry ingredients to the wet ingredients and mix just until combined.
  5. Gently fold the Easter M&M’s and sprinkles into the dough with a rubber spatula.
  6. Cover the cookie dough and refrigerate it for at least 2 hours.
  7. Once chilled, preheat your oven to 350 degrees F (175 degrees C).
  8. Use a medium cookie scoop to portion out the dough into uniform balls.
  9. Roll each dough portion between your palms and arrange them about 3 inches apart on a parchment-lined baking sheet.
  10. Press a few additional Easter M&M’s gently into the tops of each cookie ball. Bake for 10 to 12 minutes until edges are set but centers remain soft.
