Description
These Dulce de Leche Churro Cupcakes combine soft cupcakes with rich dulce de leche and a crunchy churro topping.
Ingredients

- 1 and 1/2 cups All purpose flour
- 1 and 1/2 cups granulated Sugar
- 1 tablespoon ground cinnamon
- 1 and 1/2 teaspoons Baking powder
- 1/2 teaspoon Baking soda
- 1/2 teaspoon salt
- 2 large Eggs, room temperature
- 2 teaspoons Pure Vanilla Extract
- 1/3 cup Vegetable oil
- 1/2 cup buttermilk, room temperature
- 1/2 cup sour cream, room temperature
- 1 jar Dulce de Leche (approx. 12 oz)
- 1/2 cup Granulated sugar
- 1 tablespoon Ground cinnamon
- 1 recipe Dreamy Cinnamon Buttercream Frosting
- 3–4 Baked Churros, cut into 1-inch pieces
- Extra Dulce de Leche, for filling churros and drizzling
Instructions
- Preheat your oven to 350°F (177°C) and line a standard cupcake pan with paper liners.
- In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, ground cinnamon, baking powder, baking soda, and salt.
- In a separate bowl, whisk the eggs, pure vanilla extract, vegetable oil, buttermilk, and sour cream until smooth. Pour into the dry ingredients and whisk until combined.
- Fill each cupcake liner halfway with batter.
- Bake for 14-18 minutes. Check doneness with a toothpick. Let cool in the pan for 2 minutes.
- Transfer cupcakes to a wire rack. Mix granulated sugar and ground cinnamon in a bowl. Dip warm cupcake tops into the mixture.
- Prepare the cinnamon buttercream frosting and set aside.
- Remove the center of each cooled cupcake to create a cavity.
- Fill each cavity with dulce de leche.
- Pipe frosting onto the center of each cupcake, leaving edges visible.
- Dust frosting with cinnamon sugar. Fill churro pieces with dulce de leche and place on frosted cupcakes.
- Drizzle extra dulce de leche over the cupcakes and serve immediately.
Notes
- Use room temperature ingredients for best results.
- Allow cupcakes to cool completely before adding frosting.
- Store any leftovers in an airtight container.
