Description

These Dulce de Leche Churro Cupcakes combine soft cupcakes with rich dulce de leche and a crunchy churro topping.


Ingredients

  • 1 and 1/2 cups All purpose flour
  • 1 and 1/2 cups granulated Sugar
  • 1 tablespoon ground cinnamon
  • 1 and 1/2 teaspoons Baking powder
  • 1/2 teaspoon Baking soda
  • 1/2 teaspoon salt
  • 2 large Eggs, room temperature
  • 2 teaspoons Pure Vanilla Extract
  • 1/3 cup Vegetable oil
  • 1/2 cup buttermilk, room temperature
  • 1/2 cup sour cream, room temperature
  • 1 jar Dulce de Leche (approx. 12 oz)
  • 1/2 cup Granulated sugar
  • 1 tablespoon Ground cinnamon
  • 1 recipe Dreamy Cinnamon Buttercream Frosting
  • 34 Baked Churros, cut into 1-inch pieces
  • Extra Dulce de Leche, for filling churros and drizzling

Instructions

  1. Preheat your oven to 350°F (177°C) and line a standard cupcake pan with paper liners.
  2. In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, ground cinnamon, baking powder, baking soda, and salt.
  3. In a separate bowl, whisk the eggs, pure vanilla extract, vegetable oil, buttermilk, and sour cream until smooth. Pour into the dry ingredients and whisk until combined.
  4. Fill each cupcake liner halfway with batter.
  5. Bake for 14-18 minutes. Check doneness with a toothpick. Let cool in the pan for 2 minutes.
  6. Transfer cupcakes to a wire rack. Mix granulated sugar and ground cinnamon in a bowl. Dip warm cupcake tops into the mixture.
  7. Prepare the cinnamon buttercream frosting and set aside.
  8. Remove the center of each cooled cupcake to create a cavity.
  9. Fill each cavity with dulce de leche.
  10. Pipe frosting onto the center of each cupcake, leaving edges visible.
  11. Dust frosting with cinnamon sugar. Fill churro pieces with dulce de leche and place on frosted cupcakes.
  12. Drizzle extra dulce de leche over the cupcakes and serve immediately.
