A hearty and flavorful duck giblet hot pot perfect for warming up on a chilly day.
Ingredients

- 1 duck, cut into pieces
- 1 cup duck giblets, chopped
- 4 cups chicken or duck stock
- 2 carrots, sliced
- 2 stalks celery, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon thyme
- 1 teaspoon rosemary
- 1 tablespoon soy sauce
- Salt to taste
- Black pepper to taste
Instructions
- In a large pot, heat some oil over medium heat and brown the duck pieces on all sides.
- Add the giblets, onion, garlic, carrots, and celery to the pot, cooking until softened.
- Pour in the stock and bring to a boil.
- Add the thyme, rosemary, soy sauce, salt, and pepper.
- Reduce heat and let simmer for about 1.5 to 2 hours.
- Adjust seasoning as needed before serving.
