- 2 tablespoons peanut butter
- 2 tablespoons soy sauce

- 1 teaspoon curry powder

Instructions
- Combine the chickpeas, red bell pepper, cucumber, carrot, red cabbage, cherry tomatoes, green onions, and cilantro in a large mixing bowl.
- Whisk together the peanut butter, soy sauce, lime juice, curry powder, and a pinch of salt and pepper in a small bowl until smooth.
- Pour the dressing over the salad ingredients and toss gently until mixed.
