Delicious Dal Palak (Spinach Dal) is a comforting and flavorful Indian lentil and spinach dish that’s perfect for a cozy weeknight dinner.

- 1 cup yellow lentils, rinsed
- 2 cups water
- 2 tablespoons oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1 inch ginger, grated
- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- 1 teaspoon garam masala
- 1/2 teaspoon turmeric
- 1 tomato, diced
- 4 cups fresh spinach, chopped
- Salt to taste
- Chopped cilantro, for garnish
- Lemon wedges, for serving
Instructions
- In a saucepan, combine the lentils and water. Bring to a boil, then reduce heat and simmer for 15-20 minutes, until the lentils are tender.
- In a separate pan, heat the oil over medium heat. Add the cumin seeds and let them sizzle for a few seconds.
- Add the diced onion and sauté for 2-3 minutes until translucent.
- Add the minced garlic and grated ginger. Sauté for 1 minute until fragrant.
- Stir in the coriander powder, garam masala, and turmeric. Cook for 1 minute.
- Add the diced tomato and cook for 2-3 minutes until softened.
- Add the cooked lentils and the chopped spinach. Stir well and let the spinach wilt, about 2-3 minutes.
- Season with salt to taste.
- Serve the Dal Palak hot, garnished with chopped cilantro and a squeeze of lemon juice.
