Ingredients
Scale
- 1 pound boneless chicken thighs or breasts, cut into bite-size pieces
- ¼ cup yogurt
- 2 Tablespoons oil of choice
- 1 Tablespoon lemon juice
- 3–4 cloves garlic, minced
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1 teaspoon salt
- ½ teaspoon garam masala
- ½ teaspoon fenugreek
- ½ teaspoon curry powder
- ½ teaspoon chili powder
- ½ teaspoon turmeric
- ½ teaspoon black pepper
- ½ onion, sliced or chopped
- ½ bell pepper, sliced or chopped
- 1 package slider buns (pack of 12)
- 1–2 cups shredded mozzarella cheese or cheese of choice
- ½ cup mayonnaise
- 1 Tablespoon ketchup
- 1 Tablespoon hot sauce, sriracha, or red chili sauce
- 1 teaspoon Dijon mustard
- 4 Tablespoons butter, melted
- 4 cloves garlic, minced
- 2 Tablespoons cilantro or parsley, minced
Instructions
- In a medium bowl, combine the chicken pieces with yogurt, oil, lemon juice, minced garlic, and all the spices including cumin, coriander powder, salt, garam masala, fenugreek, curry powder, chili powder, turmeric, and black pepper. Mix well until the chicken is evenly coated. Cover and refrigerate for at least 30 minutes, or up to 48 hours for deeper flavor.
- Heat a heavy-duty pan over medium-high heat. Add the marinated chicken mixture along with the sliced onion and bell pepper. Cook for 8-10 minutes, stirring frequently, until the chicken is fully cooked through and vegetables are tender. Remove from heat.
- In a small bowl, whisk together mayonnaise, ketchup, hot sauce, and Dijon mustard to make the sauce. In another bowl, combine melted butter, minced garlic, and minced cilantro or parsley to prepare the herb butter. Preheat the oven to 375ºF. Line a 9×13-inch baking dish with foil and lightly grease it with nonstick spray, oil, or butter.
- Slice the slider buns in half horizontally. Place the bottoms evenly in the prepared baking dish. Spread the sauce evenly on the inside surfaces of both the top and bottom buns. Layer the cooked chicken mixture over the bottoms, then sprinkle generously with shredded cheese. Cover with the slider tops, pressing down gently. Brush the tops of the sliders with the prepared herb butter.
- Place the assembled sliders in the preheated oven and bake for 15 minutes, or until the cheese has melted and the tops are golden. Remove from the oven and cover with foil until ready to serve.
