Ingredients

- 1 Cauliflower (Chopped or frozen florets for convenience)
- 2 Carrots (Diced)
- 1 medium Yellow Onion (Diced)
- 1 tablespoon Fresh Ginger (Grated)
- 2 Garlic cloves (Minced)
- 2 cups Kale (Chopped)
- 2 tablespoons Curry Powder (Primary seasoning)
- 1 teaspoon Turmeric Powder (Fresh can be used but may require adjustments)
- 1 teaspoon Cumin Powder (Ground coriander can be a substitute)
- 1 teaspoon Paprika (Smoked paprika can add unique flavor)
- to taste Sea Salt and Black Pepper (Essential for flavor adjustments)
- 2–3 cups Vegetable Stock (Homemade is recommended)
- 1 cup Coconut Milk (Adds creaminess)
- 4 tablespoons Coconut Oil (Ideal for sautéing)
Instructions
- Melt coconut oil in a large pot over medium heat. Add diced onion, minced garlic, and grated ginger. Sauté for 2-3 minutes until fragrant.
- Mix in chopped cauliflower and diced carrots. Cook for another 4-5 minutes, stirring often.
- Sprinkle curry powder, turmeric, cumin, paprika, salt, and pepper over the mixture. Stir well and let cook for 1-2 minutes.
- Pour in vegetable stock and add chopped kale. Cover and simmer for 15-20 minutes until vegetables are tender.
- Blend the soup to desired consistency with an immersion blender.
- Stir in coconut milk and warm for an additional 2-3 minutes. Adjust seasoning if needed.
