  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 2 medium carrots, chopped
  • 2 stalks celery, chopped
  • 2 cans (28 ounces each) whole or crushed tomatoes
  • 2 cups vegetable broth
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup heavy cream (optional)
  • 1 teaspoon sugar (optional)

Instructions

  1. Chop the onion, carrots, and celery. Mince the garlic.
  2. Add tomatoes, vegetables, garlic, broth, herbs, salt, and pepper to the Crockpot. Stir well.
  3. Cover and cook on low for 6–8 hours or high for 3–4 hours.
  4. Blend the soup using an immersion blender or in batches in a standard blender until smooth.
  5. Stir in heavy cream if using, and add sugar to balance acidity if desired.
  6. Taste and adjust seasoning.
  7. Serve hot, garnished with basil, cream swirl, or croutons if desired.
