- 2 pounds chicken breasts (boneless, skinless, about 4 pieces)
- 2 cups mild salsa
- 1 cup Mexican blend cheese (shredded)
Instructions
- Place the whole chicken breasts in your crockpot evenly spaced. Pour the 2 cups of mild salsa over the chicken breasts, making sure each piece is well coated with salsa for maximum flavor infusion.
- Cover the crockpot and cook the chicken on high for 1½ to 2 hours or on low for about 4 hours. Avoid cooking longer to prevent the chicken from falling apart and becoming too soft.
- While the chicken cooks, preheat your oven to 425℉ (220℃) to get ready for the final baking step.
- Carefully transfer the cooked chicken breasts from the crockpot into a 9×13 inch baking dish. Spoon some of the leftover salsa from the crockpot over the chicken to keep it moist. Evenly sprinkle about 1/4 cup of shredded Mexican blend cheese over each chicken breast.
- Place the baking dish in the preheated oven and bake for 15 minutes or until the cheese is melted, golden brown, and bubbling.
