This Crockpot Chicken Parmesan Soup is a warm, comforting slow-cooker meal inspired by classic chicken parmesan. Made with tender chicken, rich tomato broth, Italian herbs, and melty Parmesan and mozzarella, it’s an easy, cozy soup perfect for busy days and chilly nights.

- 1 ½ lbs boneless, skinless chicken breasts or thighs
- 1 tablespoon olive oil
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 (28 oz) can crushed tomatoes
- 4 cups chicken broth
- 1 teaspoon Italian seasoning
- ½ teaspoon salt
- ½ teaspoon black pepper
- ¾ cup grated Parmesan cheese
- 1 cup shredded mozzarella cheese
- Optional: cooked pasta or small noodles
Instructions
- Place chicken in the bottom of the crockpot. Add olive oil, onion, garlic, crushed tomatoes, chicken broth, Italian seasoning, salt, and pepper.
- Cover and cook on low for about 6 hours, or until the chicken is tender and cooked through.
- Remove the chicken, shred with two forks, and return it to the crockpot.
- Stir in Parmesan cheese until melted. Add mozzarella just before serving and allow it to melt into the soup.
- Ladle into bowls and garnish with extra Parmesan or fresh basil if desired.
