This crockpot beef lo mein is a simple, takeout-inspired dinner made with tender beef, colorful vegetables, and noodles tossed in a savory sauce.

- 1½ pounds flank steak (thinly sliced against the grain)
- 1 tablespoon oil
- 1 small onion (thinly sliced)
- 2 cups beef broth
- ½ cup soy sauce
- ¼ cup brown sugar
- 1 teaspoon ground ginger
- 1 teaspoon black pepper
- 3 cloves garlic (minced)
- 1 cup shredded carrots
- 1 cup sliced bell peppers
- 1 cup broccoli florets
- 1 cup snow peas
- 12 ounces lo mein noodles (or udon noodles or fettuccine, cooked and drained)
- ½ tablespoon cornstarch
- Scallions and sesame seeds (for garnish)
Instructions
- Heat the oil in a skillet and quickly sear the beef slices just until browned.
- Transfer the beef to the slow cooker.
- Add the onion, broth, soy sauce, brown sugar, ginger, pepper, garlic, carrots, and bell peppers.
- Cover and cook on LOW for 4–5 hours, until the beef is tender.
- Stir in the broccoli and snow peas.
- In a small bowl, mix the cornstarch with ½ tablespoon cold water to create a slurry, then stir it into the slow cooker.
- Add the cooked noodles and gently toss everything together until well coated in the sauce.
- Let it heat through for 15–20 minutes before serving.
