Description

This crockpot beef lo mein is a simple, takeout-inspired dinner made with tender beef, colorful vegetables, and noodles tossed in a savory sauce.


Ingredients

  • pounds flank steak (thinly sliced against the grain)
  • 1 tablespoon oil
  • 1 small onion (thinly sliced)
  • 2 cups beef broth
  • ½ cup soy sauce
  • ¼ cup brown sugar
  • 1 teaspoon ground ginger
  • 1 teaspoon black pepper
  • 3 cloves garlic (minced)
  • 1 cup shredded carrots
  • 1 cup sliced bell peppers
  • 1 cup broccoli florets
  • 1 cup snow peas
  • 12 ounces lo mein noodles (or udon noodles or fettuccine, cooked and drained)
  • ½ tablespoon cornstarch
  • Scallions and sesame seeds (for garnish)

Instructions

  1. Heat the oil in a skillet and quickly sear the beef slices just until browned.
  2. Transfer the beef to the slow cooker.
  3. Add the onion, broth, soy sauce, brown sugar, ginger, pepper, garlic, carrots, and bell peppers.
  4. Cover and cook on LOW for 4–5 hours, until the beef is tender.
  5. Stir in the broccoli and snow peas.
  6. In a small bowl, mix the cornstarch with ½ tablespoon cold water to create a slurry, then stir it into the slow cooker.
  7. Add the cooked noodles and gently toss everything together until well coated in the sauce.
  8. Let it heat through for 15–20 minutes before serving.
