- 1 cup diced onion
- 2 cloves minced garlic
- 3 cups chicken broth

- 1 cup grated Parmesan cheese
- 1 tablespoon Italian seasoning
- Salt & Pepper (to taste)
- 1 cup tortellini (fresh or frozen)
- 1 cup fresh spinach
- 1 cup fresh basil (for garnish)
Instructions
- In your trusty crock pot, toss together the chicken, diced onion, minced garlic, chicken broth, diced tomatoes, heavy cream, Italian seasoning, salt, and pepper. Stir gently to mix everything well.
- Set your crock pot to low and let it cook for 4 hours. The chicken should be tender and easily shred with a fork, releasing flavorful scents into your kitchen.
- Once the chicken is tender, stir in the tortellini and fresh spinach. Cook for an additional 30 minutes, or until the tortellini is heated through and the spinach has wilted.
