Crispy Sweet Potato Red Patties with Avocado Sauce

Description

Delicious and crispy patties made from roasted sweet potatoes and nutty red lentils, topped with a creamy avocado cilantro sauce.


Ingredients

  • 1 large sweet potato (about 1 cup mashed) (Peel, chop, and steam until soft.)
  • 1 cup red lentils (Rinse well before cooking.)
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • to taste Salt and pepper
  • 1/2 cup breadcrumbs (Use gluten-free if needed.)
  • 1 tablespoon olive oil
  • 1 ripe avocado
  • 1 cup fresh cilantro leaves
  • 1 tablespoon juice of lime
  • to taste Salt
  • as needed Water (For consistency.)

Instructions

  1. Prepare the Lentils: In a pot, combine the rinsed red lentils with 2 cups of water. Bring to a boil, then reduce heat and let simmer for about 15 minutes or until soft. Drain any excess water.
  2. Cook the Sweet Potato: While the lentils are cooking, steam the chopped sweet potato until fork-tender, about 10 minutes. Allow to cool slightly before mashing.
  3. Mix It Up: In a large bowl, combine the mashed sweet potato, cooked red lentils, cumin, garlic powder, salt, and pepper. Mix until well combined.
  4. Form Patties: Stir in the breadcrumbs to bind the mixture, then form into patties about 2-3 inches in diameter.
  5. In a skillet, heat olive oil over medium heat. Cook the patties for about 5 minutes on each side until golden brown and crispy. Remove and place on a paper towel to absorb excess oil.
  6. Make the Sauce: For the creamy avocado cilantro sauce, blend together the avocado, cilantro, lime juice, and salt in a food processor. Add water as needed to reach your desired consistency.
  7. Serve the patties warm, drizzled with the avocado cilantro sauce. Enjoy!
