Ingredients

  • 3 medium-sized potatoes, peeled and grated
  • 1 cup shredded cheese (cheddar or your favorite variety)
  • 1 small onion, finely chopped
  • 1 large egg
  • 1/2 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon garlic powder (optional)
  • Vegetable oil for frying

Instructions

  1. Peel and grate the potatoes. Squeeze out excess moisture using a clean kitchen towel.
  2. In a large bowl, combine the grated potatoes, chopped onion, shredded cheese, egg, flour, salt, black pepper, and garlic powder (if using). Stir until well mixed.
  3. In a large skillet, heat about 1/4 inch of vegetable oil over medium heat.
  4. Take a handful of the potato mixture and shape it into a pancake, about 1/2 inch thick. Place it in the hot oil. Avoid overcrowding the pan.
  5. Cook the pancakes for about 4-5 minutes on each side until golden brown and crispy.
  6. Transfer the pancakes to a plate lined with paper towels to absorb excess oil.
  7. Continue until all the potato mixture is used. Add more oil as needed.
  8. Serve warm, plain or with your favorite dipping sauce.
