Description
Crispy Potato & Cheese Pancakes are delicious and easy to make. They are perfect for breakfast or a snack.
Ingredients

- 3 medium-sized potatoes, peeled and grated
- 1 cup shredded cheese (cheddar or your favorite variety)
- 1 small onion, finely chopped
- 1 large egg
- 1/2 cup all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon garlic powder (optional)
- Vegetable oil for frying
Instructions
- Peel and grate the potatoes. Squeeze out excess moisture using a clean kitchen towel.
- In a large bowl, combine the grated potatoes, chopped onion, shredded cheese, egg, flour, salt, black pepper, and garlic powder (if using). Stir until well mixed.
- In a large skillet, heat about 1/4 inch of vegetable oil over medium heat.
- Take a handful of the potato mixture and shape it into a pancake, about 1/2 inch thick. Place it in the hot oil. Avoid overcrowding the pan.
- Cook the pancakes for about 4-5 minutes on each side until golden brown and crispy.
- Transfer the pancakes to a plate lined with paper towels to absorb excess oil.
- Continue until all the potato mixture is used. Add more oil as needed.
- Serve warm, plain or with your favorite dipping sauce.
Notes
- Adjust seasoning to taste.
- For a healthier version, bake instead of frying.
- Store leftovers in an airtight container in the refrigerator.
