Instructions
- Cut each chicken breast in half lengthwise to yield 4 pieces. Pound to an even thickness of ½ inch.
- In a shallow dish, whisk together eggs, salt, and black pepper.
- In another dish, combine Parmesan cheese, flour, garlic powder, smoked paprika, and Italian seasoning.
- Dip each chicken piece into the egg mixture, then dredge in the Parmesan-flour mixture.
- Heat a skillet over medium heat and add olive oil. Fry chicken for 4-5 minutes per side until golden brown and cooked through.
- Wipe the skillet clean. Add butter and garlic, cooking until fragrant.
- Whisk in chicken broth and lemon juice, simmering until the sauce thickens slightly.
- Return chicken to the skillet, spooning sauce over the pieces.
- Sprinkle parsley and arrange lemon slices on top. Serve immediately.
